Toddler Friendly Cauliflower Cheese

I've posted the recipe I used to use for Small when she was younger HERE, but now she's well into toddlerhood I make one that the whole family can share (at least Small & I - Mr B hates cauliflower!). I wanted to include a source of protein, so I started making a version of my 'cheese' sauce with a tofu base.



Ingredients

1/2 white onion
2 cloves garlic
1 package silken tofu
1 cup nutritional yeast (I always make sure I buy the kind with B12)
1 TSP lemon juice
Pinch of sea salt
Pinch of ground pepper
1/2 TSP mustard powder
1 TSP mixed herbs
1/2 TSP turmeric 
2 TBSP cornflower
500ml plain soya milk

1 or 2 heads of cauliflower

Vegan 'cheese' or breadcrumbs for topping

Fry the onion and garlic for a couple of minutes in a little oil until soft, then add to food processor bowl. Put in the tofu and soya milk and blend until smooth. Add the rest of the sauce ingredients and blend.
Boil or steam your cauliflower until tender, drain and add to an oven dish. 
Pour over your 'cheese' sauce and make sure it's all coated. Don't worry if the sauce looks too thin at this point, it will thicken up in the oven as it cooks - or you could heat it for a couple of minutes before mixing in.
Add your toppings and cook for around 25 minutes at 200C.

  2. Have you tried making this with other kinds of cauliflower? I get purple & green at my local market - I think that'd really appeal to kids!
